Muffin Fun


As I'm sure you're well aware, my King Arthur Flour giveaway (CLICK HERE!) is going on right now. I wanted to include this portion with the Giveaway post, but because of juggling my time, and wanting you to be able to get the Giveaway going so you could get your goodies in time to use for Christmas so the posts are separate.  There's still time to get you thinking, or drooling, though.


The first variation Healthy Chick tried was cranberries and walnuts.  They turned out wonderfully, however, I would have liked them a little sweeter.  So if you put tart cranberries in your mix, you make want to keep that in mind.


For my display, I turned a dessert bowl upside down, tied a jute ribbon around the muffin and placed on top.  The pedestal stand?  I'm glad you asked.  Remember my successful sled trip from a previous post?  Yep, I got these on the same trip, two wooden candle holders that got glued together, painted and distressed.


If you're going to use them as a gift, this is a fun way to use your old tins that don't look so wonderful.  (Okay, maybe the hand drawn harlequin didn't work out so well.)  I know this isn't original, but fun just them same.  The muffin variations here are:  Chocolate, chocolate chip.  I added 1/4 c. cocoa and 1/2 c. chocolate chips for a half-batch.


The last variation (and my personal favorite) oatmeal, cinnamon chocolate chips.  I ground 1 c. oatmeal in the food processor and added 1/2 c. of cinnamon chocolate chips for a half-batch.  These were my favorites.  If you are the lucky winner, I would suggest you use more liquid then the instructions call for.  The flavor was heavenly, but here at the Cheap Chic Homestead, would have liked them more moist.

Wouldn't this be fun for a Christmas morning or New Year's day brunch???  We really liked the tulip cups, too.  I would get them again.

  2. Yummy for the eye AND the appetite!!! Mmmm!!! a lot of times when I'm using cranberries I also use raisins, they compliment each other PERFECTLY because one is SWEET and one is TART... and you don't need extra sugar that way... I LOVE those cupcake papers, WHERE do you buy them??? and what do you call them??? I was trying to figure out how to make them, Hmmmm that would be a great post for someone to do,( HINT if anyone has an idea about it)... I want to enter your giveaway, I have to find WHERE to do so...

  3. We have tea and bisquits at work every Tuesday. Teas are provided and we take turns bringing tea sandwiches and sweets (for 50 people!) so I'm always looking for new recipes. I'll try these next week and report on how they were received. They sound yummy!

  4. Thanks for sharing these fun ideas, Kim! Glad you enjoyed the mixes and papers. A note on the muffins being too dry: You might try baking for just a few minutes less next time - overbaking will definitely dry things out (and oven temperatures vary).
