Homemade Italian Breadcrumbs


This was one of those evenings when I already had dinner started.  Italian bread crumbs in the cupboard are a staple in our house.  When I went to reach for them, they were nowhere to be found.  That's another one of those blessings of the internet--someone, somewhere, has recreated them, now I just had to find a recipe and give it a try.  This is what I found (from cdkitchens):

Italian Bread Crumbs
Ingredients:
1 cup bread crumbs
1/2 teaspoon salt
1/2 teaspoon parsley flakes
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon sugar
1 dash oregano


Combine all ingredients.

They turned out great, my family couldn't even tell there was a substitute.  (Which is amazing, this is a tough, persnickety crowd.)  Since I didn't have any plain bread crumbs, I laid out eight slices of wheat bread on a cookie sheet and baked them in the oven for about ten minutes @ 450oF, then I tore them in pieces and put them in the food processor.   Do you want to know what I was making?  Boy, you guys gotta know everything, don't cha?


Oven Chicken Tenders*
Six chicken breasts (I always use organic)
Approx. 1 stick butter
Approx. 8 Tblsp. shortening
2 eggs
Italian bread crumbs (2-3 cups)

Heat oven to 450oF.  Put 3-4 Tblsp. each butter and shortening (I just "eyeball" it) in two 9x13 pans, or your favorite baking pans.  Place in oven while it's preheating till the butter and shortening are melted or nearly melted.  In the meantime, slice chicken breasts into "tender-sized pieces".   Hand beat egg in bowl big enough to place chicken into.  Roll chicken in egg, then your bread crumbs.  Place in baking pans.  Return to oven.  Bake for 40 min.

I generally make these with frozen fries and a vegetable.  I put the fries in at the mid-point of the baking time, so everything's ready at once.  Serve with Ranch dressing, or whatever dippers you like.

Is this how everyone else makes their chicken tenders?  If it is, I'm sorry for boring you with our recipe.   This is a nice "no-brainer" dinner that is a crowd pleaser.

  1. I love to do my own breadcrumbs and always with a wheat bread! So much better than store bought! They freeze well too.

  2. Hi Kim! This was such a great thing to share! I like to save my crusts or ends in my freezer so I can make the fresh bread crumbs too. I also use them on chicken but I call them chicken "nuggets" in order to get my kids to eat them. I'm all about the trickery these days! I've even snuck in some flax seed for good measure!

  5. Gosh I'm hungry! I have never made my own bread crumbs. Italian bread crumbs are a must in our house. I am always making cutlets of some sort. I usually do my on the stove with a bit of olive oil. Do you ever make sweet potato fries? Yum!

  8. You can tell when someone loves to cook. I would have at most, toasted bread and grated it! But most likely, the minute I discovered we were out of something would be when I announced that we were eating out :)
