Rocky Road Chocolate Pizza


I thought of this recipe recently when I saw all of the packs of white chocolate on sale after Christmas in my local Publix store. - You know the kind that comes in the ice-cube-tray packaging? -  This would be a fabulous use of Christmas sale items carrying over to another holiday - say Valentine's Day?  The recipe is as easy as can be and can be made when you are rushed for time as long as you have the ingredients on hand.  Okay, no more teasing, here's the recipe.

Chocolate Pizza
1 (12 oz. pkg. chocolate chips)
l lb. white almond bark, divided
2 c. mini marshmallows
1 c. crisp rice cereal
1 c. peanuts
1 (6 oz.) jar red maraschino cherries, drained, cut in half
2 tblsp. green maraschine cherries, cut in half
1/3 c. flaked coconut
1 teas. oil

  • Melt chocolate chips with 14 oz. almond bark (I used plain white chocolate.) in large saucepan over low heat, or microwave for about 1 min., stirring until smooth.  Remove from heat.
  • Stir in marshmallows, cereal, and peanuts.  Pour into greased 12 inch pizza pan.  Top with cherries, sprinkle with coconut.
  • Melt remaining 2 oz. white chocolate with oil over low heat or in microwave, stirring until smooth; drizzle over pizza.  Chill until firm; store at room temperature.  (Recipe from Kraft)

Suggestions:  Use a prettier dish than I did!  Seriously, line the bottom of your pan with parchment paper if you have it.  I had to pry the "pizza" out of this dish even though I buttered it.   If you don't have a nice round pan, the chocolate mixture is stiff enough that you could lay parchment on a flat tray and make it round as you are spooning it out.  You could probably cut it into actual slices that way, too.
