Rainbow S'Morsels with Pictures!

Are you surprised to find a recipe here today?  It's been awhile since I've done some sugary lusciousness mainly because I haven't been eating it--go me!  Six-Foot Chick requested this recipe when she was home this past weekend.  All of "hers" got eaten, so I had to make another batch--oh, darn! 


This is an old recipe that calls for Rainbow morsels.  I don't know if they are made anymore, they aren't in my area, so I substituted them for mini chocolate chips and nonpareils sprinkles.  You know, the nonpareil "crunch" is essential!

Rainbow S'Morsels Recipe

1 c. all purpose flour
3/4 c. graham cracker crumbs (about 4 rectangles)
2/3 c. (or 10 2/3 Tbls.) softened butter
1/4 c. sugar
1/4 c. firmly packed brown sugar
1/4 teas. salt

1 c. marshmallow cream
1 1/2 c. Rainbow morsels, or chocolate chips with nonpareils sprinkles.  I used mini chips.

Preheat oven to 325°F.  In mixer bowl, blend flour, graham cracker crumbs, butter, sugars, and salt until crumbly.  Press into greased 9" square baking pan (or a close proximity!).

Bake 15 min.  Spoon marshmallow cream over base; let stand until softened.  Gently spread marshmallow cream over warm base; top with chocolate chips.  Bake 5 min. longer.  Cool completely.  Cut into 2 1/4" squares.  Makes 16 squares.  Note:  Sometimes I can find the snow caps candy with colored sprinkles--that type is milk chocolate.  I like the semi-sweet better in baking, but go with what you like.


I almost forgot to mention, the reason I put "with pictures" in the post title is because I couldn't find an image for these anywhere!


Now, this may not be a photo from the original recipe, but it sure is a good one!
