Last Hurrah Cupcakes!


a.k.a  Banana Cream Pie Cupcakes.  Why the "last hurrah?"  Well, if you're on my CCH Weight Loss Team, we are weighing in for the first time on Monday, February 28th.

This past week was Artsy Chick's 15th birthday.  She didn't know what kind of cake she wanted (last year it was a frothy coconut number), so I got free reign to choose something.  Fortunately, with oodles of friendly bloggers around, Moogie, from Moogie and Pap commented on one of my posts last week and guess what I found when I went to her blog?  Yes, indeed, this decadent recipe.  To save you a bit of frustration, and getting butter on your mousepad (yes, I did!), I typed up the instructions in .pdf format so if you would like to try your hand (not your keyboard) at these, you can print out the instructions.

We served the cupcakes on a cake pedestal.  I used an extra 1/2 banana to decorate the top and Artsy Chick wanted to add hearts 'cause she's girly like that.

I followed the instructions as written.  The only thing I might do differently is crush the crumb mixture with my rolling pin -- the food processor seemed to pulverize it too much.  I would also suggest making these a day ahead if you are in charge of dinner, too, as they are time consuming.  I was in the kitchen way too long.


Yum-O, they were a homerun!  (The crumbles were my favorite part(!), made with graham crackers, toasted pecans and coconut, sugar and butter.)
