German Pancakes - Emergency Dinner


I spent the entire day painting at my mom's house on Tuesday.  While I was on my way home, I realized I would have three hungry children when I got home at dinner time, Darling Husband was out of town.  (Admit it ladies, dinners aren't the same when dh's aren't around!)  I knew we were out of just about everything, milk, bread, lunchmeat.  My options were something with eggs or...?  I remembered my recipe for German pancakes - it's really just one big eggy "pancake" thing and as easy as can be!  As a kid bonus, they are eaten with a dusting of powdered sugar.




German Pancake Recipe
4 eggs
2/3 c. flour
1 tsp. salt
2/3 c. milk
3 Tbls. butter
    1.  Butter a heavy 10" oven proof skillet (cast iron).
    2.  Preheat over to 450 degrees
    3.  Beat the eggs with a fork to blend.
    4.  Slowly add flour, beating constantly
    5.  Stir in salt and milk
    6.  Pour the batter into the skillet & drop the butter by teaspoonfuls into the batter, spreading evenly.
    7.  Bake at 450 degrees fro 15 min.
    8.  Reduce heat to 350 degrees and bake another 10 min.
    9.  Remove from oven and sift powdered sugar over the top.
    10.  Serve with heated maple syrup.
    I like these because you get more eggs than flour stuff.  I made a double batch and used two casserole dishes.  Can you believe I've never had an iron skillet?!

    3. You nailed it! My husband is a SAHD by day and student by night. When he's not home, dinner is way dumbed down. Maybe that's not the right way to put it. I make a lot of food I know he wouldn't eat when he's at class. Last night it was pancakes and porkroll (or Taylor Ham for you non-New Jersey folk). I'm so gonna try this recipe!
