The title of this post would not sit well with my Darling Husband, as he wouldn't agree that it is possible to substitute his beloved pasta! For those of you who might want to take a chance, I think you'll like this idea. I first ran across this in a Suzanne Somers healthy eating book. Originally, I didn't take much note of it, but now, I really like to use it as a pasta alternative mainly for myself, although, one of my girls will eat these "noodles" as well.
These were made with a spiral slicer. Healthy Chick hasn't taken this spiral slicer with her yet (I hope she doesn't see this post, or I may have to get my own). You can find one on Amazon. To use it, I slice a zucchini in half, cut off the ends, and center the cut portion on the small plastic tines. Then it gets placed on top of the cutting and container half of the slicer. Mine will then fasten with a twist. If you don't want to buy a slicer, you can try this same technique using a vegetable peeler.
From here, you turn the handle on top and the zucchini runs over the blade.
This is what you get---swirly thin healthy, zucchini noodles! From here, I saute them in a frying pan, you can use olive oil, or whatever you'd like.
These are topped with homemade spaghetti sauce, but use your imagination! (This is shown with about 3/4 of a smallish zucchini and about 1/3 c. of sauce. I was still hungry so finished the rest of the zucchini with a little more sauce.) Yum, yum, yum.

Not as filling as pasta, but then again, you can have 10 bowls and still enjoy fewer carbs and calories!

I'm sure my husband and I would love this. We always buy spaghetti squash as a pasta substitute. I just used my last zuchinni last night. Darn!! I may have to buy one now.
ReplyDeletePerfect for a low carb or good carb diet Kim!! IMO that kind of meal is always more filling and satisfying whereas pasta leaves you feeling sluggish and hungry pretty quickly afterward not to mention what it does to your blood sugar! I can't wait to try this!!
ReplyDeleteOh, Kim, I have also used shitake mushrooms in lasagna instead of noodles and that is a wonderful substitute.

ReplyDeleteI've made zucchini "pasta" before and it's amazing how great it taste with sauce! That's the part that I thought would be weird. But it really IS delicious!
ReplyDeleteI never thought of this! I do, on occasion, use spaghetti squash, which is pretty tasty -but a lot more work to cook. :) Thanks for the idea, and link to the spiral slicer. It is definitely going on my Wishlist.

I made a comment on the JL page that I am finding food a burden. Well, looking at the picture of this dish makes me realize I don't dislike all food. This is appealing and sounds delicious. I don't have a fancy spiral cutter but I'm sure the old old fashioned spiral apple/potato pealer would work too.

I am really not into cooking, but maybe I would try cooking this salad and let my friends taste it. I was glad that there are salad which are low in carbohydrate. I can say that I am a very health conscious person and these recipes would really help me to reach my goal, that is to live healthy.
