Fish On A Stick!

Or Fish Sticks!  It's been awhile since I've done a recipe.  This one sounds strange, but it's really good!  The real name isn't fish-on-a-stick, although that's pretty catchy.  It's Spicy Fish Kabobs with Couscous.  This is another recipe from my BHG Biggest Book of 30 Minute Meals cookbook.  Even if you're not overly crazy about fish, this is a good recipe because of all of the spices.
 Spicy Fish Kabobs with Coucous
1 1/2 lbs. fresh or frozen halibut or sea bass steaks 
(I always use orange roughy, because I prefer it)
1 teas. ground cumin
1 teas. ground coriander
1/4 teas. salt
1/2 teas. black pepper
1/8 teas. cayenne pepper
3 Tblsp. butter or margarine
1/4 c. orange juice
1 10-oz. package (1 1/2 c.) quick-cooking couscous
1 14-oz. can chicken or vegetable broth
1/2 c. orange juice
2 med. zuccini, cut into 1/2" slices
1 med. yellow summer squash cut into 1/2" slices
  1. Thaw fish, if frozen.  Rinse fish; pat dry with paper towels.  Cut fish into 1" cubes.  Set aside.
  2. In a small bowl combine cumin, coriander, salt, black pepper, and cayenne pepper.  In a medium saucepan melt butter over medium heat; add spice mixture and cook for 1 minute. Transfer 2 tbls. of the mixture to a small bowl.  Stir the 1/4 c. oj into mixture in bowl.  Stir couscous into remaining mixture in saucepan.  Cook for 1 minute more.  Stir broth and the 1/2 c. oj into saucepan.  Bring to boiling.  Cover and remove from heat.  Set aside.
  3. Grease the rack of an unheated broiler pan; set aside.  On six long skewers, alternately thread fish cubes, zucchini slices, and yellow squash slices.  Brush with the reserved buter and spice mixture.
  4. Place kabobs on the prepared rack of broiler pan.  Broil 3-4 inches from heat for 6-10 min. or until fish flakes easily when tested with a fork, turning once.  Serve with couscous.

I have square plates that I use to serve these on - pretty and fun.  To eat them, we slide the fish and squash off the sticks onto a bed of couscous.  So yummy!  It's hard to get good pictures of dinner recipes because the food gets served right after or sometimes during the photo session. 

If I started downloading my camera at the dinner table, I'm pretty sure it would cause a food fight!  No, I don't have miracle children, they don't all like this.  Mom and dad do, though.  I hope you get a chance to give my fish kabobs a try.
