I followed the recipe that was in our local Tampa Tribune newspaper from Jaden Hair of Steamy Kitchen Recipes, (a fab local blogger) who got the recipe from Bakerella. I followed Jaden's recipe, which she made for Valentine's Day, so she used pink topping and pink and red sprinkles.
You will need:
- Red velvet cake mix
- cream cheese frosting
- 1 pkg. each white and chocolate candy melts
- Sprinkles of your choice
- lollipop sticks
- Round or flower shape cookie cutter 1- 1 1/4" diameter
Now comes the tricky part. Roll the cake mixture into balls, using your cookie cutter, make a base of a "cupcake" allowing the extra mixture to form over the top for the top of your cupcake.
We (the Fun-Sized Chick and I) couldn't get this to work right, so we used the cookie cutter to cut out bases, then put a half mound of ball on top to look like a cupcake.
After you get them in a cupcake form, put in the refrigerator for 40 min. or in the freezer for 15 min. to set them. When they are ready, melt both your white and regular chocolate in the microwave, for 30 seconds at a time until they are melted and smooth.
Dip the bottom of your cupcake into the regular chocolate, then insert your stick. Next dip the top of your cupcake in the white candy melts and top with red, white and blue sprinkles.
Poke into a styrofoam base until the are hardened. (This goes very quickly.) Eat and enjoy! I didn't have to refrigerate mine--they got eaten too quickly. Everyone loved them, including my Darling Husband. Now for a note: I would NOT make these again the same way. Making the cupcake shape was just too much of a hassle. I'd just roll them into balls, dip some into chocolate melts and some into white melts, add sprinkles and call it a day.

ReplyDeleteLOL Kim they're adorable! I made these last year when I found Bakerella's blog. I gotta admit, they were aggravating ! LOL I was having difficult with the dipping chocolate part and gave up after 15 and just made "balls" on a stick! LOL It's not just those either. Every year now for the past 6 years I am expected to make my red velvet bon bons for Christmas Eve family gatherings and hated it because I hated dipping all those chocolate. A cousin gave me a hint on dipping chocolates and I tried it last year. I may have to follow her suggestions and just try my hand at the mini cupcakes on a stick again. You've inspired me!
